Ingredients:
- Donuts:
- 1 1/4 cup apple cider
- 2 cups Bob's Red Mill Gluten Free 1 to 1 Baking Flour
- 3/4 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon Rodelle Ceylon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1 egg
- 2 tablespoons butter melted
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1/2 cup buttermilk (coconut milk)
- 1 teaspoon vanilla extract
- GLAZE
- 3 tablespoons milk (coconut or maple syrup)
- 1 cup powdered sugar
- 1 teaspoon Rodelle Ceylon ground cinnamon
Instructions:
- Preheat oven to 350 degrees and grease 2 donut pans.
- In a large bowl whisk together your egg, and sugars. Pour in the coconut milk, apple cider, and vanilla extract.
- In another bowl mix your flour, baking soda, baking powder, salt, and spices.
- Pour the dry ingredients into the wet, and using a spatula mix until just incorporated. You do not want to over mix.
- Pour the batter into a gallon zip top bag, and snip off the corner. Pipe the batter into the pan, filling 1/2 to 3/4th's full.
- Bake for 10 minutes. Allow to cool completely before dipping into the glaze.
- To make the glaze whisk together the ingredients in a bowl. Dip the tops of the donuts into the glaze, and allow the excess to drip off. Set aside on parchment paper and allow the glaze to fully harden.
