Dinner- Sue Dunstan's Chili

Ingredients:
- (items with an asterisk are optional)
- 1 lb ground beef
- 2 lbs smoked pork butt*
- 5 garlic cloves, minced
- 1 onion
- 64 oz can tomato juice
- 2 cans kidney beans, drained
- 1 can black beans, drained*
- 1 can whole tomatoes, diced
- 1 small can diced tomatoes with peppers*
- 2/3 tsp chili powder (optional- 1/8-1/4 tsp for mild)*
- 2/3 tsp chipotle powder (1/8-1/4 tsp for mild)*
- 1 roasted poblano, diced*
- 1 tsp cinnamon
- 2 tsp cocoa powder
- 1 tsp coriander
- 1 tsp cumin
- 1 tbsp corn starch dissolved in cold water
- Salt and pepper to taste
Instructions:
- Heat olive oil in Dutch oven
- Sauté garlic and chili powder for 1-2 min
- Add onions, salt, and pepper and sauté for 6-8 min until soft
- Brown ground beef
- Add pork, tomato juice, beans, and diced tomatoes.
- Bring to a boil
- Add corn starch and boil for 1 min
- Reduce to a simmer for 1 hour
