IP Chicken Vegetable Soup

Ingredients:
- 1 1/4 lb carrots, sliced
- 1 lb celery, sliced
- 1 onion, chopped (optional)
- 1 lb leeks, white and green parts sliced
- 1 lb chicken breast, 1/2 inch pieces
- 3 TBS oil
- 2 tsp salt
- A handful of fresh thyme (left in a bunch) or 3 tsp dried time
- 8 C stock
Instructions:
- Saute button, cook chicken for 5m
- Add everything else, stir
- Manual, 15m, quick release
- Discard thyme if using fresh
