IP Squash and Apple Soup

Ingredients:
- 2 TBS coconut oil
- 1 medium sweet onion, chopped
- 3 garlic cloves, peeled and chopped
- 1 medium butternut squash, peeled and cut into 1-2 inch chunks
- 1 medium sweet potato, peeled and 1-2 inch chunks
- 1 tart-sweet apple (Pink Lady) cored and 1-2 inch chunks
- 1 tsp dried sage
- 1/4 tsp pumpkin pie spice
- 1/4 tsp dried ginger
- 1/2 tsp salt
- 1/8 tsp pepper
- 2 C stock
- 1/2 can full fat coconut milk (~6.5 oz)
Instructions:
- Set the IP to saute and add the coconut oil. Add onion and garlic, cook 3-5m
- Add squash and potato, stir to combine. Cook a couple of minutes
- Press Cancel button, add everything but coconut milk, stir
- Manual 10m, natural pressure release
- Puree soup then add coconut milk
