Dessert- Snickers Pie

Make these in cupcakes so I can freeze what is not eaten
The night before: Coconut milk in fridge
Ingredients:
- Crust:
- 5 TBS cocoa powder
- 12 pitted dates
- 1/2 tsp salt
- 1 C nuts (almonds were good)
- 1 C unsweetened dried coconut
- 1 tsp vanilla
- Caramel Layer:
- 10 pitted dates, soaked in boiling water for 10m and drained
- 3 tsp ghee or coconut oil
- 2 tsp vanilla
- 3 TBS almond butter
- Nut Butter Mousse
- 2 Cans full fat coconut milk, refrigerated overnight
- 3/4 C nut butter
- 2 TBS maple syrup
- 1/2 tsp vanilla
- Pinch sea salt
- Additional
- 1/2 C dark chocolate for drizzling
Instructions:
- Crust:
Put all ingredients in a food processor and process until smooth and sticks together. Push into bottom of cupcake papers (or parchment lined pie pan). Put in the freezer
Caramel
Put all ingredients in food processor (dont need to clean it). Process until smooth, divide in cups and put in freezer
Mousse
Scoop out the coconut cream from the cans of coconut milk (use the remainder for smoothies). Add all mousse ingredients to food processor and mix until smooth. Add to cups
Freeze overnight
Add melted chocolate drizzle if desired.
