Instructions:

  1. Preheat oven to 400 F
  2. Place tomatoes on a baking sheet. drizzle with 3 tbsp of the oil and sprinkle with salt and pepper.
  3. Roast for 30 minutes and let cool for 10 minutes.
  4. Meanwhile heat the remaining 2 tbsp oil in dutch oven over medium-high heat. Add the garlic and shallot for 3-5 minutes until the garlic is fragrant and the shallot is translucent.
  5. Add broth and tomato paste and turn off the heat.
  6. Place the cooled tomatoes in a blender along with the broth mixture. Add the basil, thyme, 2 tsp salt, and 1/4 tsp pepper.
  7. Blend on high speed until very smooth and all of the seeds are pureed, about :20 seconds.
  8. Return soup to the pot and cook over low heat until warmed through.
