Ingredients:
- 3 lbs mixed tomatoes, quartered or 2 28oz canned tomatoes
- 5 tbsp olive oil
- Sea salt
- Black pepper
- 4 cloves garlic, chopped
- 1 shallot, coursely chopped
- 3 c chicken broth
- 1/4 c tomato paste
- 1/2 c packed fresh basil leaves
- 1 tsp fresh thyme leaves
Instructions:
- Preheat oven to 400 F
- Place tomatoes on a baking sheet. drizzle with 3 tbsp of the oil and sprinkle with salt and pepper.
- Roast for 30 minutes and let cool for 10 minutes.
- Meanwhile heat the remaining 2 tbsp oil in dutch oven over medium-high heat. Add the garlic and shallot for 3-5 minutes until the garlic is fragrant and the shallot is translucent.
- Add broth and tomato paste and turn off the heat.
- Place the cooled tomatoes in a blender along with the broth mixture. Add the basil, thyme, 2 tsp salt, and 1/4 tsp pepper.
- Blend on high speed until very smooth and all of the seeds are pureed, about :20 seconds.
- Return soup to the pot and cook over low heat until warmed through.
